It’s 4:00 and your kids are asking the dreaded question, “what for dinner?”  You repress the urge to say, “cereal” and head to Pinterest.  Scrolling for something healthy, vegan, and delicious enough to make everyone happy can make you want to throw your phone across the room.  Then when you find something that might fit the bill, you click on it and it has a prep time of 2 hours and a ingredients list so long you wonder if they are listing the ingredients or just everything in their house.  I feel you because I am you.  My goal is to help you make easy and delicious vegan recipes for you and your family. You are vegan because you care about your health, the animals and the planet.  You’re already winning, you shouldn’t need a culinary degree to make dinner.
